Ingredients

  • 4 slices of seed bread or cereal bread
  • 4 Exotic Fruit Box avocados
  • 4 eggs
  • 2 tomatoes
  • 1 clove garlic
  • 1 lime
  • A bunch of fresh coriander
  • A few shoots of chives
  • A drizzle of extra virgin olive oil
  • Salt

Directions

Cut a tomato in half and the rest of tomatoes in slices.

Peel the avocados. Cut two of them into thin slices. Set aside.

Put the other two avocados in a bowl and crush with a fork. Add a little salt, a few drops of lime juice and a little chopped coriander. Set aside.

In a saucepan, place the eggs and fill with water only until covered. Add a pinch of salt.

Cover the saucepan and place on a high heat. Once they start to boil, let them cook 6 minutes. After this time remove two eggs.

Leave the other two for 4 more minutes. After this time, peel them carefully and cut them into slices. Set aside.

Toast the slices of bread and rub them with the clove of garlic.

Cover two of them with the avocado paste. Place tomato slices on top. Cover with some boiled egg slices. Finish with a few shoots of chives and a few drops of extra virgin olive oil.

Take the other two slices of bread and place a few slices of tomato on top. Open the eggs and place two halves in the center of our bruschetta. To each side put half avocado in fan form. Sprinkle with a little extra virgin olive oil.

Serve at room temperature.

Tips

To stop the eggs from boiling, put them in a bowl with very cold water. That way we will drop their temperature and they will not continue to cook inside.
