Wash the quinoa under cold water. Cook in salted water until tender. Drain well and set aside in a large bowl.
Remove seeds from the pomegranate and add them to the bowl.
Chop the turkey breast and add it to the quinoa bowl. Add the raisins, chopped walnuts and chopped mint leaves. Mix well.
In a small bowl mix oil with Modena vinegar, and beat with the help of a fork. Add to the salad and take a few turns. Add salt if necessary.
This salad is even richer overnight because the dressing will blend better with all the flavors, but in that case, remember not to add the mint leaves until ready to serve, as the herbs rust quickly on contact with the vinegar.
